As the title of this post suggests, garlic scapes were the vegetable of the week in my MWWB last week (I’m still catching up with my posts; bear with me). After a quick google search, I learned that essentially garlic scapes are to garlic as green onions are to onions.
I also discovered several exciting recipes, among them garlic scape pesto (NB: Not to be eaten before a hot date). Since I wasn’t feeling ambitious, I sliced some up and put them on a turkey burger, giving them the role otherwise reserved for onions or other aromatics.
I’ve since put some in salads, in pasta and on top of a stir-fry. They’re good. Garlicky but green and crunchy.
